Never one to shy away from a challenge, Braedyn jumped at the chance of being ‘Operations Manager’ at the Great Catering Co, his first role outside of the kitchen in 28 years. “I definitely wanted to stay connected to this industry as I’m so passionate about it.”

A chef, Braedyn has been working for himself for the past decade with his own business, he has also worked in a number of reputable establishments in Auckland and in Europe, most notably Braedyn worked for the Italian food critic Antonio Carluccio at his famous Deli and restaurant in London’s Covent Garden. “When I left I was replaced by none other than Jamie Oliver.”

Braedyn has also been involved with the NZ Karate team both as an international competitor for 20 years and more recently as national coach for the past 10 years, he goes on to say (with a smile) “this comes in very handy when dealing with our kitchen brigade.”
